Some English Tea, Freshly baked Banana Bread and Porter!

With temperatures reaching close to sub zero, we had the first snow fall here in London this winter!! Waking up to snow clad roof tops and ghostly foot prints on thin sheets of snow was truly a delight!!

As the Lord rested on the seventh day, its going to be one major chillax day this side of the world with laundering and cleaning on the cards!! I am mulling over Some English Tea, freshly baked banana bread and tucking into the crisp pages of Porter, it definitely has all the making of a perfect lazy Sunday afternoon!!

This recipe is a favourite of mine and has gone down a storm every single time I’ve made it,leaving the loaf tin dishwasher clean! It’s not a time guzzler and with few basic ingredients- its perfect for the lazy baker!

140 gms Butter
2 Large Eggs
140g Self Raising Flour
140 gms caster sugar
1tsp Baking Powder
2-3 Very ripe banana
Cinnamon (optional)

Pre Heat the oven to 180C/160C fan. Grease a loaf tin with some butter and line the base with some baking parchment. Beat the eggs and keep aside. Mash the bananas until its nice and smooth and save for later.

Mix the butter and sugar in a large bowl, slowly add the beaten eggs along with some flour and baking powder.Blend the banana mix into the Mixing Bowl. Add some cinnamon to the mix (Because cinnamon makes everything magical!!)

Pour the mix into the loaf tin and bake for 30mins till the loaf is golden brown and when you stick a skewer it comes out all clean!!

Ta-da! So that’s your afternoon tea sorted! Trust me – The recipe works like a charm! If you are in a 'chefy' mood you can perhaps do some icing sugar dusting magic and be all  fancy!

Be warned – You will be overwhelmed by popular demand ;)

Until Next time!

Take care!
